The past weeks have been exciting and busy.

 

There has been a lot of baking and experimenting going on.  More time spent in the kitchen but my girls ( and their friends) were not complaining either as they get to taste all my "experiments".

Eggless Cakes and Cupcakes

Here are some of our eggless bakes this past weeks.

Vegetarian butter cakes with buttercream frosting for a wonderful boy and lovely lady.

Eggless Bakes

We have a number of vegetarians among our friends and family. Some observe them on certain days while some are for life. Thus, it is imperative we cater for vegetarians in our bakes.

 

Eggless bakes were frowned upon by non vegetarian and sidelined as bland and dry. It is no longer the case. There are many delicious eggless cakes and cupcakes that rival their egg-rich siblings.

 

We baked Vegan Mocha Chocolate Chip Muffins, and eggless Chocolate Chip Cookies. The muffins were moist, rich and yummy. Each cookie weighs around 50gm with a diameter of 3.5 inches.  These huge cookies were delicious. Nobody would guess they are eggless!! In fact, my girls prefer vegan chocolate chip cookie and have been begging me for more.
