Lemon Blueberry Cupcake

My daughters love lemon cakes and cupcakes. One rainy day, we were stuck at home with nothing to do. As there were some lemons on the fruit bowl and blueberry pie filling in the fridge, I decided to bake some lemon blueberry cupcakes.

I used cream cheese frosting to compliment the lemon. Simple dual coloured swirl frosted on the cupcakes.

 
 
These cupcakes were delicious and did not last long in our house. Not even overnight!

Rich Carrot Cake with Cream Cheese Frosting

Carrot cakes are delicious and healthy with a hint of spices such as cinnamon and nutmegs. There are many different recipes out there. Some use pineapples; some use raisins and some use citrus fruits.

Our carrot cakes use all three; pineapples, citrus fruits and raisins; along with different spices. The citrus flavor is also present in the cream cheese. This is a carrot cake we made for a lovely couple and their wonderful kids.

Rainbow Cake

I just noticed that there were no cakes in my few  latest blog updates.
 
So, I have decided to post the cake I recently baked. 



.The cakes is fluffy and soft. I left the decoration simple, mono colour. The only indication were the sprinkles. The unassuming cake held a surprise inside.  Krishna was stunned when he cut the cake. It is a Rainbow Cake filled with Cream Cheese, topped with buttercream frosting.



 The vibrant colour really stood out.
 
 
Everyone loved the cake. The colour, taste and texture is a winning combination.
